WaterLemon Shaved Ice Recipe



WaterLemon Shaved Ice Bowls. Inspired by Whitney from Grounded Nutrition! They remind me of snow cones!! I made these as a special treat for Day 5 on my Watermelon Island Cleanse, eating only watermelon for one week!

It's sidewalk days here and my girls and I are going to go walk around downtown today and enjoy the sunshine together. There's always lots of great smelling and tempting carnival foods at sidewalk days like mini-donuts and snow-cones. I will enjoy this one later this afternoon and satisfy any cravings that might come up!

WaterLemon Shaved Ice Recipe:
to fill one watermelon half:

Ingredients:
1/2 small, or small/medium watermelon
1/2 fresh lemon

Directions:
Cut watermelon in half.
Scoop out the flesh and pulse blend watermelon lightly in a blender.
Strain out the seeds with a strainer or nutmilk bag.
Squeeze in 1/2 a fresh lemon, stir and pour into a freezer-safe container.
Freeze overnight.
Take out the next day, chip away with a fork or knife -be careful!
Serve in your watermelon bowl!

What is a Watermelon Island Cleanse?


What is Watermelon Island /or a mono fruit island?

To understand Watermelon Island we must know what a mono meal is: Mono-meals are meals that consist of one ingredient! Mono fruit cleanses like Watermelon Island are when we choose one fruit to eat mono-meals of for a set period of time. You can do 3-14 days eating only fruit to experience an amazing cleanse. I did three days my first time and plan on doing one week this time around! Watermelon/or Mono Fruit Island can also be done on other fruit like bananas, peaches, mango, grapes, persimmons, etc. My sister Nikki did a mono fruit island once, picking one different type of fruit each day: 

Day1- Bananas
Day 2- Peaches
Day 3- Grapes
(She doesn’t like watermelon!)

The idea is to pick one fruit for the duration of your challenge. Fruit is great because it’s fast, cheap and easy! Haha. It doesn't take much to prepare and eat a watermelon. Just cut it in half and scoop with a spoon. Or slice it, cube it or cut it into fun shapes with a cookie cutter. I like to blend watermelon into smoothies if I’m going to be on the road or going to work. They are affordable too. I just bought 5 days worth of watermelon for just over $50. That’s about $10 a day for a trip to Watermelon Island!



How Does it Work?

You choose your one fruit and go stock up! You are going to need plenty of whatever fruit you are eating in your house, so that you have enough to eat and are not tempted by other foods. How much fruit you need will depend on how long you choose to stay on the island. Once you have an abundance of ripe fruit you can begin.

Eat as much watermelon (or fruit of your choice) as you like for breakfast dinner and supper. Only Watermelons. With the exception of adding lemon/lime juice for those who get melon belly, which is painful abdominal cramping from watermelon. If you choose another fruit, make sure it's a sweet fruit like the ones mentioned above and try to get in enough calories a day, depending on your activity level. You can use chronometer online or a download a calorie counter app to your phone! 


I cannot stress enough the importance of eating RIPE fruit only!  Drink plenty of water too. Your body will be detoxing and although watermelon is high in water content it is also high in sugars! I drink at least two  litres a day, and three if I get a lot of exercise. Try to exercise everyday too, but take time to rest and relax as your body detoxes and heals. Also, go to bed early. Sleep is so important when detoxing. 

Watermelon Island gives your digestive system a break. Fresh RIPE fruit is the easiest food for your body to digest, spending little time in the stomach. Therefore it takes up little energy, allowing our bodies the time and energy they need to spend healing and detoxing. Also, when you only eat one type of fruit, it enhances this experience even more. One ingredient is digested more efficiently than several. 

By only eating one food/ingredient you will be more aware of when you are satiated. The watermelon will loose its taste and it will be easy to learn how to tell when you are truly full. 

The main reason I am interested in doing this is to gain more awareness. Your body is amazing and knows way more than you think it does. If you can learn to listen to it, you can achieve higher levels of health. Mono-Fruit Islands enhance your intuitive ability to listen to your body's needs, like satiation. As I slowly add food back in at the end I will pay close attention to the things that disagree with me. Also, fruits and veggies will taste better after detoxing. I couldn't believe all the flavor that was in an apple when I re-introduced them into my diet after doing Banana Island.  

If you want to try this yourself: Try to eat as clean as you can before you travel to the Island. Reduce coffee, alcohol, processed foods and animal products for several days prior. And eat as much fresh raw fruits and veggies as you can. It is ideal (but not essential) to be eating a low-fat raw vegan diet beforehand, but if you cannot, at least try to cut out meat and dairy products. Having lots of fat in your bloodstream interferes with your body’s ability to absorb the fruit sugars efficiently.

Summer Detox Tips & Recipes



Spring might be the time that most of us feel inspired to do a cleanse or detox, but Summer is when eating healthy is the easiest and yummiest with tons of fresh organic seasonal fruits and veggies available! There’s just more variety in the summer! ...And who can resist a juicy watermelon? Forget the detox pills and crash diets, all we need is to do is increase our intake of fresh fruits, veggies and greens. Our bodies are intelligent and constantly in a state of detoxing so the best thing we can do is add the foods that help this process along while slowly reducing the one that are straining to the body’s detox systems. I prefer to focus on adding in the good stuff!
Our bodies eliminate toxins through the bowels, through the lymphatic system and through our skin. The kidneys and liver play an important role too. Now that it’s summer we can get outside to run, walk, swim and play - getting your heart pumping and sweating out those toxins through your skin. You can detox by getting your lymphatic system moving by jumping on a trampoline, or rebounder, or jumping into a cold lake on a hot day. To help your bowels and organs with detoxification we need to increase the amount of fresh, organic fruits and veggies and decrease processed foods, processed sugars, gluten, dairy, meat, coffee and alcohol. Go at your own pace, and focus on adding in the fruits and veggies you love the most. Also don’t forget to relax, breathe, and sleep well when stepping up your detox game. Sleep is an important part of the detox process and so is relaxation time for your body and mind. Try taking Epsom salt baths while detoxing to aid in the process and spend a little quality time with you!
Here are the three Summer Detox Tips and Recipes to step up your toxin elimination game:
1. Drink More Water - Lemon Water!
750ml-1L of water 
1/2 lemon - squeezed or in slices

There is nothing easier or more detoxing for our bodies than drinking a big glass of water first thing in the morning. Our bodies have worked hard overnight to filter out toxins and repair as we sleep and that glass of water in the morning helps flush all the toxins out. Lemon adds extra vitamin C, helps flush out toxins and adds flavor! 

It's important to choose the best quality filtered water available to you. In my hometown, we can get filtered spring water from Prairie Spring, or you can hook up an amazing water filtration system to your home with Northern Water Cleaners. 









2. Add More Fresh Fruit! 
Watermelon Orange Juice
High in water content, Vitamin C, fibre and other amazing nutrients, this juice is great for flushing out unwanted toxins and is so tasty, it will be your new favorite summer drink! 

One of the most important detox nutrients is vitamin C, a major antioxidant in the body.


Recipe:
Ingredients:
-3 cups of watermelon cubes
-2 peeled oranges

Directions:
-Blend the orange juice and watermelon in a blender.
-Strain with a fine mesh strainer or nut-milk bag. 
-Or serve as is, with the pulp, for extra fibre. 





3. Eat Your Greens!
Apple Beet Summer Salad 
Leafy greens and fresh herbs enable the body to cleanse and detox more efficiently. They contain Chlorophyll, which helps the body get rid of environmental toxins like heavy metals and pesticides. *It's important to try and buy organic if your goal is to detox, as not to be adding in more toxic substances with pesticides and other chemicals that are sprayed on conventional foods.

This salad contains mixed greens and fresh herbs to boost your summer detox. I also include beets, which aid in digestion, detoxing the liver and stimulating the kidneys and lymphatic system while apples contain pectin, a plant fibre that helps prevent the absorption of toxic heavy metals into the intestinal tract. Apples also detox the blood and support the lymphatic system. 

Recipe Ingredients: 
-2 heads organic romaine lettuce, or mixed greens
-1 organic apple, chopped
-1 large red beet, spiralized with a spiralizer  (or peeled and chopped into matchsticks) 
-2 organic carrots, peeled and chopped into matchsticks
-2 tbsp raw organic pumpkin seeds

Toss all ingredients in a bowl. 

Dressing
-6-8 tbsp fresh lemon juice
-2 cloves garlic
-2 medjool dates (pitted and soaked in water 1/2 hour)
-2 tbsp fresh chopped basil
-2 tbsp fresh chopped dill

Directions
-Blend the first three ingredients together in a blender.
-Add the fresh herbs and pulse blend a few times to mix in. 
-Pour on your fabulous dressing on your salad and enjoy!!!

Cinqo de Mayo Vegan Recipes


Happy Cinqo de Mayo! Last year on this day the Global Regina Morning News invited me to be on the show for the very first time to share healthy Mexican-inspired recipes! I got to chat with Rustie Dean, from my hometown Moose Jaw, and everyone made me feel so welcomed and comfortable. I was nervous talking on LIVE television for the first time, but now you get me talking about healthy recipes and I wont stop! I can't believe it's been a year of sharing healthy tips and recipes. I would like to thank the entire Global Regina Morning Team for all of your support and enthusiasm for sharing healthy living with your viewers and allowing me to be apart of it!   

Here are the four healthy recipes I shared during the segment last year. All the recipes are gluten-free, dairy-free, plant-based, vegan and mostly made of raw fruits and veggies. Great for your Cinqo de Mayo Party or any night of the week! Anyone can make these simple healthy recipes.


      My first time on TV! 

Fresh Avocado Zucchini Guacamole
The first recipe is a fresh avocado and zucchini guacamole - By adding zucchini, we need less avocado and can cut the fat in half. The zucchini also adds to the creaminess, taking on the flavor of the avocado and spices. Avocados are a good fat, but indulging in too much puts extra strain on our digestive system and can leave us feeling heavy and tired. The tortilla chips were homemade from brown rice tortillas and coconut oil, with mexican spices. By making your own you chips can control the amount of salt, the type of oil, and other ingredients that go into them. Plus they are baked and not fried! They only take 15 minutes from prep to finish... and it stops you from opening and potentially eating the whole bag of chips! If you only make one tortilla, you only eat one tortilla!


Guacamole Ingredients

2 avocados
1 zucchini- peeled and chopped 
1 garlic clove
1 small lime, juiced
1 tsp cumin

1 tomato, diced
¼ red onion, diced
1/4 cup chopped Cilantro 

In a food processor or high speed blender, blend the avocado, zucchini, garlic, cumin and lime together until smooth. Stir in tomatoes, onion and garnish with cilantro. Serve with freshly made tortilla chips and enjoy!


Homemade Crispy Tortilla Chips

2-3 brown rice tortilla wraps
coconut oil
1 tsp basil
1 tsp garlic powder
1 tsp chili powder
1/2 tsp onion powder

Preheat oven to 325 degrees. Mix spices together and set aside. Lay out your tortilla shell on a baking pan lined with parchment papaer. Spread coconut oil on in a thin layer to the tortilla using your hands or a pastry brush. Cut into 12 wedges and sprinkle your chili seasoning on top! Bake for 10-12 minutes until golden brown and crispy. Let cool and crunch away! You can play with the spices for different flavors, or squeeze some lime on them for added zing!

Zesty Taco Lettuce Wraps
I love these healthy Zesty Taco Lettuce Wraps. What do I love about the taco wraps... What don't I love!? They are made entirely of fresh fruits and veggies and so incredibly delicious. I make the taco seasoning from scratch and use chopped cremini mushrooms as the meat replacement. Top with your favorite taco toppings for a fresh, crunchy, zesty meal.



Taco Shells
Romaine lettuce leaves- washed and dried 

Taco 'Meat'
1 small container of cremini or white button mushrooms - chopped finely 

Taco Dressing
3 medjool dates, soaked in ½ cup water for ½-1 hour until soft
1 green onion chopped
1 garlic clove
2 tsp chili powder
1 tsp cumin
½ tsp bell pepper flakes
1 tsp paprika
1 tsp coriander

Toppings
1 avocado, chopped
1 tomato, chopped
¼ red onion, chopped
1/2 lemon

Blend all of the ingredients together for the Taco Dressing, including the water from the dates, in a food processor or high speed blender until smooth. Pour over mushrooms and stir until mixed well. Let them marinate for an hour and then serve on fresh romaine lettuce boats, topped with fresh avocado, onion, tomatoes. Finish by squeezing some fresh lemon juice over top of your tacos and enjoy! You can add chopped cilantro, salsa, pico de gallo or guacamole. 


Spicy Black Bean Brownies Recipe
Anybody can make these easy Spicy Black Bean Brownies, inspired by spicy mexican hot chocolate! All you need to make this spicy chocolate treat is a brownie mix and a can of black beans. I'm serious! I used a gluten-free brownie mix from the health food store and a can of black beans. The only directions you follow on the brownie mix are the oven temperature settings and baking times. The can of black beans replaces the oil and eggs in the brownies, making them moist and chewy, high in fibre and low in fat. Adding in the cayenne pepper and cinnamon gives them a spicy, mexican kick that will intrigue your taste-buds.



Ingredients:
1 can black beans
 (15.5 oz)
1 dry brownie mix (20 oz)
1/4 tsp cayenne pepper
2 tsp cinnamon 

It doesn't get any easier than this. Blend UNDRAINED black beans in food processor or blender until smooth. Mix in with brownie mix, adding the cayenne pepper and cinnamon and stir until well blended.  If you like them really spicy you can add 1/4 tsp of more cayenne pepper. Pour into a greased 8x8 baking pan and follow the package directions for baking temperature and bake time. Let cool for 5 minutes, sprinkle cinnamon on top and gently rub it in. You won't believe how good these are!
